(makes 12 medium sized muffins)
- 150 grams apple sauce (no added sugar)
- 1 cup low fat milk
- 2 eggs
- 1 cup kiwifruit, peeled and chopped
- 1/2 cup brown sugar
- 1 cup bran flakes
- 2 cups wholemeal flour
- 3 tspn baking powder
- 1 tspn cinnamon
- 1/4 cup pumpkin seeds (optional)
Step 1. Pre-heat oven to 200° C.
Step 2. In a large bowl mix together apple sauce, milk and eggs.
Step 3. Add kiwifruit and brown sugar, mix well.
Step 4. Add bran flakes and gently combine.
Step 5. Sift in wholemeal flour, baking powder and cinnamon. (Tip remaining contents of wholemeal flour from sifter into bowl). Add pumpkin seeds if using. Fold gently.
Step 6. Spoon into muffin pans.
Step 7. Bake for 20-25 minutes until cooked through and golden in colour.
