Healthy Fruit Muffins

(Makes 12 medium size muffins)


  • 2 cups wholemeal flour
  • 4 tspn baking powder
  • 1 tspn cinnamon
  • 1/4 cup raw sugar
  • 1/2 cup blueberries (fresh or frozen)
  • 1/2 cup mixture of chopped dried fruit like sultanas, raisins, cranberries
  • 1 banana, chopped
  • 1 cup low fat milk
  • 1 egg
  • 180 grams apple sauce (with no added sugar)


Step 1. Heat oven to 200°C.

Step 2. Sift flour, (tip bran flakes back in) baking powder and cinnamon.

Step 3.  Add raw sugar, followed by fruit and gently mix.

Step 4. In separate bowl beat egg, add milk and apple sauce.

Step 5. Make a well in dry ingredients and pour in milk mixture.

Step 6. Gently combine (do not over mix).

Step 7. Spoon into 12 greased muffin tray.

Step 8. Bake for 20-25 min until golden.

Variation: Add pumpkin seeds or sunflower seeds for a bit of crunch!
