Coconut & Seed Flapjack



  • 3 Tbspn honey
  • 50g low fat spread
  • 75g brown sugar (just slightly under ½ a compact cup)
  • 100g oats (1 full compact cup)
  • 2 Tbspn sunflower seeds
  • 2 Tbspn pumpkin seeds
  • 3 Tbspn shredded coconut
  • 1 tspn nutmeg
  • 40 g chopped, dried fruit: sultanas, apricots or cranberries (or use a mixture of all three)


Step 1.  Heat oven to 180°C. Line a baking tray (approx. 26cm x 15cm) with baking paper.

Step 2.  Melt honey, low fat spread  and sugar gently, stirring until texture is soft.

Step 3.  Mix oats, seeds, coconut, nutmeg  and dried fruit together in a bowl.

Step 4.  Add wet ingredients to the dry ingredients and stir until well combined.

Step 5.  Press mixture into pan with the back of a spoon so it is well compressed.

Step 6.  Bake for 20 minutes, until golden.

Step 7.  When cool, cut into pieces,  (about 12 to 15 slices).
