Chicken and Spinach in Homemade Tomato Sauce


(Serves 4)


Tomato Sauce

  • 1 Tspn olive oil
  • 1 medium onion, peeled and diced
  • 2 cloves garlic, peeled and crushed
  • 400 gram can chopped tomatoes
  • Handful of fresh basil leaves, slightly torn
  • Salt/pepper
  • 1 Tspn olive oil
  • 4 chicken thighs (boneless and skinless)
  • 1 bag baby spinach leaves
  • Little grated mozzarella cheese


Step 1. Pre-heat oven 190°C.

Step 2. To prepare Tomato Sauce, heat oil in pan and stir-fry onion and garlic for 1 minute.

Step 3.  Add tomatoes and heat through.

Step 4. Add basil leaves, salt and pepper to season.

Step 5. Simmer and then cover, continue to simmer for about 20 minutes until sauce thickens slightly. Remove from heat and set to one side.

Step 6. Heat oil in pan. Add chicken and brown slightly. Season with pepper and remove from heat.

Step 7. Place spinach in ovenproof dish. Microwave spinach for 1 minute.

Step 8. Place chicken on top of spinach then pour over tomato sauce.

Step 9. Sprinkle with a little grated mozzarella cheese.

Step 10. Bake for 20 – 25 minutes until chicken is cooked through.

Step 11. Serve with either rice or baked potato, steamed vegetables or salad.
