Blueberry and Bran Muffins

(Makes 12 medium sized muffins)


  • 1 ½ cups All bran
  • 1 ¼ cup skim milk
  • ½ cup unsweetened applesauce
  • ½ cup brown sugar
  • 1 egg
  • 1 tspn vanilla essence
  • 1 ½ cup whole meal flour
  • 1 tspn baking soda
  • 2 tspn baking powder
  • 1 cup frozen blueberries


Step 1.  Preheat oven to 180°C. Grease muffin tins.

Step 2.  Mix together All bran and milk, and let stand for 10 minutes.

Step 3.  In a large bowl, mix together apple sauce, brown sugar, egg and vanilla essence.  Add bran mixture and mix well.

Step 4.  Sift together wholemeal flour (tipping bran flakes in at end of sifting), baking soda and baking powder.

Step 5.  Add sifted ingredients into bran mixture, mix until just blended. (Do not over mix).

 Step 6.  Fold in blueberries gently and then spoon into muffin tins.

Step 7.  Bake for 15 to 20 minutes, until tops look crispy.
