Bacon and Egg Muffins



  • 1 doz free range eggs
  • 400gms Hendersons dry cured bacon
  • Sliced tomato and avocado
  • Grated Edam Cheese

How to make it:

Preheat oven to 180 degrees Celsius. Line a muffin tray with muffin liners. Put a slice of bacon in around the muffin hole. Bake for around 5 mins to get it a bit crispy. Take the bacon out and break an egg into each muffin hole. Put it back in the oven for 15 mins. After 15 mins take the muffins out and put the tomato and avocado on top and finish with a sprinkle of grated cheese. Put it back in the oven for another 5 mins. Enjoy
